5 Minutes with Ruby from Peace, Love and Granola

Posted on 19 November 2014

We caught up with Ruby from Peace, Love and Granola over virtual green smoothies to chat healthy recipes, food photography and her healthy living philosophy.

What inspired you to start Peace, Love and Granola?
My main inspiration and driving force for creating this account was to be able to share my passion for healthy eating and healthy living with the world. Additionally, my love for food photography and styling played a major role. The account was going to enable me to form a platform for me to get inspired by others, meet and talk to like minded people and to be able to keep up a healthy lifestyle.

Have you always been interested in health and fitness?

Not really. I never liked school sport and didn’t really feel the need to exercise. When I was about 14 this all changed for me, and I was more conscious of the food I was eating and my desire to stay healthy and fit. Which is when I started experimenting with healthy food and ingredients.

What’s your active life mantra?
You only get out what you put in!

You have so many delicious creations, what’s your favourite?
I absolutely adore my coconut and almond bliss balls. The perfect pick me up snacks full of nutritious and delicious ingredients.

Favourite healthy ingredient and why?
Such a difficult choice – I’m going to say cacao as it’s healthy and enables me to enjoy guilt-free chocolate flavored desserts so I don’t feel like I’m missing out!

What will we always find in your fridge?
Medjool Dates. They are base ingredient in so many of my raw deserts.

When you’re not cooking what healthy cafes do you like to hang out at?
I don’t really have a favorite, but these days most cafes offer healthy choices that cater for vegan/vegetarian/health conscious individuals. I always look for fresh and grilled options.

Can you share a favourite recipe with us?

Coconut and almond bliss balls

1 cup almond meal

1 cup raw organic oats

1 cup dessicated coconut

3 tbsp maple syrup

2 tbsp coconut oil (melted)

5 soaked dates

Put all ingredients into a food processor. Roll mixture into balls. Put in fridge to set for 3 hours.

What’s your favourite kind of exercise?
Love doing anything that works my legs and abs. Squats, Reverse lunges, plank

What does your weekly fitness routine look like?
At times I am a bit slack, but when I’m being good I usually do home workouts, which consist of 200 crunches, 50 push ups, 100 squats etc or something similar – bodyweight exercises are great when you’re short of time! I also do one personal training session a week for half an hour.

Favourite post workout snack?
Any fruit! Especially berries!

Workout you’d love to try?
Kick boxing!

Three favourite Vie Active pieces?
