To say our Vie Active HQ went a buzz over Bronte Kitchen is an understatement.
It was unlike any other "Tasty Tuesday" the Vie Active girls had ever experienced before.
We stopped, our jaw's dropped, and we found ourselves drawn to these treats, in complete amazement.

Introducing Alexandra Ellis, the founder of Bronte Kitchen.


Tell us a bit about yourself?
My name is Alexandra Ellis, I’m 30 and I live with my husband Ryan and our French Bulldog Teddie in Bronte! I love the ocean, sharing great food with friends and family, sunshine, travel and exercise.

What inspired you to start Bronte Kitchen?
 I have always wanted to switch from Finance to Food and moving from my role in London back to Sydney helped make a clean break and create Bronte Kitchen!

What’s your active life mantra? Move more than you eat…. We all have very busy lifestyles and there are countless opportunities to make life more convenient so to stay active and eat a balanced diet you must make a conscious effort. The Australian climate makes exercising regularly a pleasure. Try waking in the dark of a cold London winter for an early morning run- it can nearly break you!

Why do you think it’s beneficial to eat raw? Food in its raw form for a lot of people is easier to digest, it’s unprocessed. In its raw state food items such a fruits, veg and nuts contain essential food enzymes that are often lost when food is cooked. The enzymes allow us to digest properly and soak up the vitamins and minerals available, plus I think it tastes great!


What are your favourite super foods to add to your recipes and why?  Organic Raw Maca Powder – I love the nutty flavour it brings to a breakfast smoothie. It’s claimed to aid endurance so it keeps you going throughout the working day. And blueberries, they are one of nature’s superfoods that go with everything, for breakfast, in smoothies, as a snack and guilt free dessert!

What’s your favourite post workout snack? My chilled Apricot Granola bar. It’s packed with 21 different nuts, seeds, dried fruit and superfoods, it’s very sustaining.

Can you share a raw dessert recipe for us to try for our Tasty Treats Thursday? If you are time poor and have people coming for dinner this Raw Chocolate Mousse is perfect for dessert. Its simple, contains only 5 ingredients and has a rich decadent flavour without being too naughty. Serves 4.

Ingredients

  • 1 avocado
  • 1 banana (just ripe)
  • 3 tbsp hazelnut or almond butter
  • 4 tbsp organic cacao powder
  • pinch salt

Place all of the ingredients into a food processor and process until the consistency is smooth and slightly airy. You can add a tsp of maple syrup if you like it sweeter. Spoon into small serving bowls and set in the fridge for 15 minutes. Top with raspberries crushed with a squeeze of lime juice and sprinkling of coconut sugar. Mango or stewed rhubarb is also a delicious addition.

What’s your view on sweeteners?
In my Bronte Kitchen items I use maple syrup, honey and occasionally coconut sugar. Maple syrup has an amazing natural sweetness and it’s my favourite to work with. If I treat myself to a traditional piece of cake though containing refined sugar it’s not the end of the world in my opinion, everything in moderation.

If we could only try one of your raw treats which should we try?
Best to go with the most popular – the Salted Maple Ball. They taste like they should be bad for you, people are getting a little nuts for them!

When you’re not in the kitchen whipping up raw treats, how do you like to workout?
In summer I like to run laps of soft sand at Bondi early morning followed by a rewarding dip in the ocean, I do reformer bed pilates 3 times a week and have just recently got back into some boxing at the new Clovelly gym Symetrie.

What are your three favourite healthy hang outs?
Cali Press in Bronte is an obvious one for me, they do great cold pressed juices and nut mylks, they are local for me and stock Bronte Kitchen goodies! Porch and Parlour on Ramsgate Ave Bondi, who can go past the green breakie bowl? And OOVIO Organics in Paddington for the most beautiful teas in Sydney, Anthia is a naturopath star.
